Monday Night Dinner vs. Me

Yes it's Thursday and yes I'm aware that I haven't blogged since I've been home from Wyoming- nearly two weeks ago. My apologies, but I've been busy- I promise. However, I did manage to make Monday Night Dinner for everyone at Gram & Gramp Lug's- told ya I haven't been lollygagging around. I've been busy. And I had a bachlorette party last weekend at the Cape- told ya... B.U.S.Y.
Are you wondering what I made for Monday Night Dinner? Here's a hint- it was sloppy and gooey but very delicious. Give up? Sloppy joes with noodle salad, corn on the cob and apple crisp for dessert- are you jealous you weren't there?- because you should be.
Apple crisp is my favorite dessert- ever. And I'll share my recipe under one condition- if you make it, you must invite me over for a taste test- deal?!
Ingredients:
10 Apples- Peeled, Cored & Sliced
1 Cup Suga'
1 Tablespoon Flour
1 Teaspoon Cinnamon

1 Cup Quick Cooking Oats
1 Cup Flour
1 Cup Packed Brown Suga'
1/4 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Cup Melted Butter

Bake: 350 Degrees for 45 Minutes
In a large bowl mix apples, suga, flour & cinnamon together.
Grease a 9x13 pan & distribute the apple mixture evenly.  
Next- combine oats, flour, brown suga, baking powder, baking soda & butter. Crumble over apple mixture & vwala, you're donzo.

Homeward Bound

I was right, the best was yet to come. Yesterday we checked into a (sweet) hotel on the outskirts of Jackson Hole. We spent the day by the pool reminiscing about the last week and  working on our tans.  The weather was perfect once again- a great way to end the trip. Last night, we had reservations for the Bar J Wranglers. It was the best show I have ever seen them perform- it put the icing on the cake. They sang everything from Johnny Cash's "Big John", to Randy Travis "Don't Ever Sell Your Saddle" and they even ended the night singing Lula Bell- my all time favorite for obvious reasons. This trip has definitely been one to remember- Wyoming you never cease to amaze me.

How bout them cowboy's

Yesterday consisted of shopping in downtown Jackson Hole, having lunch at the Local (an up scale burger joint), kayaking down the Snake River, having dinner at The Gun Barrel and finishing up the day as spectators at the Jackson Hole Rodeo. And let me tell you, how bout them cowboy's- riding them bulls and broncs with no fear, roping those calfs and looking mighty handsome in the act like only real cowboy's can. What a day- what a way to celebrate Warren's 24th birthday. We are so blessed- all of us, that we're able to be here and do this. Today is our last full day in this beautiful place. Ten days went by so quickly-too quickly. But stay tuned because I have a feeling that the best is yet to come...

Happy Birthday in heaven

Happy birthday in heaven Warren- I can't think of any place I'd rather be on your birthday then here in Wyoming- your very favorite place. Yesterday we hiked Cascade Canyon- like planned. We took a boat across Jenny Lake to the trail head. The  hike was the easiest one yet with lots and lots of tourists- needless to say it was not a favorite, but...we're still glad we did it.  Mom and Dad flew in last night around 7:30. The boys picked them up while Kristin and I stayed back and whipped up a grilled chicken and rice dinner- mhmm hmm good. Our "living quarters" seem to be getting smaller by the minute but I suppose that's the fun in camping- I mean you always could flip your eggs while laying in bed but now there is barley room in the bed-oh dear. Today we are going to kayak and fish down the Snake River. It's supposed to be another beautiful sun shining day- perfect weather for a cruise down the river. Stay tuned, I'll keep you posted...

If you want to see the view, you've got to take the hike...

We just got back into service, hence my silence these last few days- but no worries I have lots to share! Thursday, like planned we took a gondola ride up to the top of Rendezvous  Mountain (its alongside the Teton Mountain range). With a 360 panoramic incredible view we felt like we were on top of the world. We watched paraglyders fly off the summit into the open sky it was a sight to see. As we watched we all agreed it was cool- but the thought of doing it ourselves made our stomachs queazy. After taking a small hike we headed back to base camp, ate lunch and were off to DuBois to pick up our sleeping arraignment for the next week - dad and moms trailer. Since then we've done everything from quading to Fish Lake and the Continental Divide, to attending the local DuBois Rodeo, to horseback riding, to kayaking, to fishing and at the top of our list- hiking. Ev's been our motivator all week and keeps reminding us "If we want to see the views, we've got to take the hike" or something like that- it changes day to day.  So far he's been right- but we have one more hike left today- this one  to Cascade Canyon.  Unlike all the others, this one  is "kind of" a touristy hot spot nestled in the Teton National Park.   I'll be sure to take lots of photos so stay tuned. Oh yeah, and mom and dad are flying in tonight to be with us- could this trip get any better?!

Safe & Sound

We flew into Jackson Hole around 8:00 pm. We had a fabulous view of the Tetons on the way in and to top it off the sun was just setting-how dreamy. After grabbing our belongings (or having the boys grab our belongings) we hopped in the truck and headed into town. We spent the night at the Antler Inn which just so happened to be in the center of town- perfect for our touristy needs!
   
Today we're taking a gondola ride to the top of Rendezvous Mountain-hopefully its a clear day and we get a good view- I'll keep you posted!

We're going to Jackson

Jackson Hole, ready or not here we come. Me, Wade, Ev and Kristin. Ten days in paradise- I can hardly contain my excitement. I've been whistling "Jackson" by Johnny Cash all day long- I suppose it's better than me singing it.  But here we are the night before departure and my to-do list is still a mile long- oh vey, so much for a good nights sleep. Also, did I mention that I already love traveling with Ev?! He put together a detailed itinerary so we can be sure to get the most out of each day- thank you Ev- yous da bomb.com! While we are exploring the wild west I plan to blog daily- service is iffy in those parts but I'll do my best! Stay tuned...
